QUESO FUNDIDO CON CHORIZO
A perfect appetizer for dipping. Queso Fundido with chorizo is a staple in many Mexican restaurants.
Warm, gooey perfection served in a small skillet, cast iron pan or clay pot with tortillas or tortilla chips.
Ingredients:
1 onion or jalapeño (optional)
1 chorizo (casing removed)
12 oz shredded Oaxaca cheese or substitute*
Tortillas or tortilla chips
Salsa
Directions:
Preheat oven to 350 degrees.
Add the oil in a frying pan on medium heat. Add the onion and cook until slightly transparent for about 5 minutes (optional).
Add the chorizo and to the same pan until cooked.
Place half the chorizo meat in a cast iron pan or oven-safe dish with the jalapeno (optional). Cover in grated cheese and bake for 10 – 12 minutes until bubbling.
Place the remaining chorizo on top and serve immediately with tortillas or tortilla chips and salsa. You can also keep the mixture on low heat and stir occasionally if serving later. Store leftovers in a sealed container in the refrigerator.

Buffalo mozzarella, Manchego, and Chihuahua cheeses, are all great substitutes.

That’s okay! You can place all ingredients into a cast iron pan and heat it on the barbeque or stovetop on low heat until bubbling. Stir occasionally.
