QUESO FUNDIDO CON CHORIZO

A perfect appetizer for dipping. Queso Fundido with chorizo is a staple in many Mexican restaurants. Warm, gooey perfection served in a small skillet, cast iron pan or clay pot with tortillas or tortilla chips.

Ingredients:

  • 1 onion (optional)

  • 1 chorizo (casing removed)

  • 12 oz shredded Oaxaca cheese or substitute*

  • tortillas or tortilla chips

  • salsa

 *while usually made with Manchego or Chihuahua cheeses, Oaxaca or Buffalo mozzarella are both great substitutes.

To Prepare: 

  1. Preheat oven to 350 degrees.

  2. Fry chorizo meat and onion until cooked.

  3. Place half the chorizo meat in an oven-safe dish. Cover in grated cheese and bake for 10 – 12 minutes (until bubbling).

  4. Place the remaining chorizo on top and serve with tortillas or tortilla chips and salsa.

In lieu of baking in the oven, you could place all ingredients into a cast iron pan and heat on the barbeque or on the stovetop until bubbling.
